- Bring a large pot of salted water to a boil.
- Cook the spaghetti according to package instructions until al dente.
- In a skillet, cook the pancetta over medium heat until crispy.
Combine
- In a bowl, whisk together the eggs, grated Parmesan, and black pepper.
- Once the spaghetti is cooked, reserve some pasta water and drain the rest.
- Add the hot spaghetti to the skillet with pancetta and remove it from heat.
- Quickly pour the egg and cheese mixture over the spaghetti, mixing rapidly to create a creamy sauce, adding reserved pasta water as needed.
Serve
- Serve immediately, garnished with additional Parmesan and black pepper.
Notes
For a vegetarian version, you can replace pancetta with sautéed mushrooms. Serve with a side salad for a complete meal.
