  • 100 grams Pancetta Diced into small pieces
  • 2 large Eggs Use room temperature eggs for best results
  • 100 grams Parmesan cheese Freshly grated for flavor
  • 1 teaspoon Freshly ground black pepper Adjust to taste

Method
 

Preparation
  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package instructions until al dente.
  3. In a skillet, cook the pancetta over medium heat until crispy.
Combine
  1. In a bowl, whisk together the eggs, grated Parmesan, and black pepper.
  2. Once the spaghetti is cooked, reserve some pasta water and drain the rest.
  3. Add the hot spaghetti to the skillet with pancetta and remove it from heat.
  4. Quickly pour the egg and cheese mixture over the spaghetti, mixing rapidly to create a creamy sauce, adding reserved pasta water as needed.
Serve
  1. Serve immediately, garnished with additional Parmesan and black pepper.

Notes

For a vegetarian version, you can replace pancetta with sautéed mushrooms. Serve with a side salad for a complete meal.
