Main Ingredients
  • 3 cups unsweetened shredded coconut Ensure coconut is unsweetened for perfect balance.
  • 1 14 oz can sweetened condensed milk Provides the necessary sweetness.
  • 15 oz dark chocolate or semi-sweet chocolate Use dark chocolate for a richer flavor.

Method
 

Preparation
  1. In a medium bowl, mix the shredded coconut with sweetened condensed milk until all coconut strands are coated.
  2. Form the mixture into 12 small logs and place them on a parchment-lined baking sheet.
  3. Chill the logs in the refrigerator for 20 minutes to firm up.
Chocolate Melting
  1. Break 10 oz of dark chocolate into a microwave-safe bowl and heat in 30-second intervals, stirring in between, until smooth.
  2. Add the remaining 5 oz of chocolate and mix until velvety.
Dipping and Storing
  1. Remove the coconut logs from the fridge and dip each one into the melted chocolate using forks.
  2. Place the dipped logs back on parchment paper to solidify.
  3. Store the bars in an airtight container.

Notes

Best enjoyed with a warm cup of tea or coffee. Store in an airtight container for up to a week at room temperature.
