Preparation
- In a large bowl, place the 4 ounces of softened cream cheese.
- Gradually add about 2 cups of powdered sugar to the cream cheese, mixing until you have a thick, sticky, and uniform dough.
- Fold in 1 cup of the chopped pecans, ensuring they are evenly distributed.
- On a clean work surface, sprinkle the remaining half cup of chopped pecans.
- Roll the mixture into a cylindrical log, pressing gently for the pecans to adhere.
- Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours or overnight.
Serving
- Slice the log into circular pieces, about half an inch thick, and arrange on a platter.
Notes
Store wrapped in plastic wrap in the fridge for up to a week. For longer storage, slice and place in an airtight container.
