3 Ingredient Strawberry Yogurt Bites

These delightful strawberry yogurt bites are a refreshing, healthy snack made with just three ingredients. Perfect for impromptu picnics or as a fun dessert.

Ingredients
  

Base Ingredients
  • 1 cup yogurt of choice Use Greek yogurt for creaminess and protein.
  • 1/2 cup fresh strawberries, hulled and diced Use fresh strawberries for best results.
  • 3/4 cup fresh strawberries, sliced or chopped These will be pressed into the top.
Toppings
  • 1/2 cup granola, more for topping Smaller pieces work better for topping.
  • 1/4 cup granola, smaller pieces work better Use as a topping on each cup.
Equipment
  • 12 cup muffin liners or silicone baking pan Liners make it easier to pop out the bites.

Method
 

Preparation
  1. Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
  2. Sprinkle about 2 teaspoons of granola into the bottom of each cup and set aside.
Mixing
  1. In a medium bowl, add the yogurt and hulled, diced strawberries.
  2. Using a pastry cutter or fork, mash the fruits into the yogurt until mostly mixed, leaving a few chunks.
  3. Stir and fold until well combined.
Assembly
  1. Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, smoothing it out.
  2. Press a tablespoon of sliced strawberries into the top of each cup.
  3. Sprinkle about 1 teaspoon of granola over the strawberries.
Freezing
  1. Place the muffin pan into the freezer and chill until firm, about 2-4 hours.
  2. Once frozen, pop out each bite and allow to thaw for a few minutes before enjoying.

Notes

Keep bites stored in an airtight container in the freezer for up to 1-2 months. Thaw for 3-5 minutes before serving. You can also use frozen strawberries; just thaw and drain excess liquid first.
