Preparation
- Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each cup and set aside.
Mixing
- In a medium bowl, add the yogurt and hulled, diced strawberries.
- Using a pastry cutter or fork, mash the fruits into the yogurt until mostly mixed, leaving a few chunks.
- Stir and fold until well combined.
Assembly
- Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, smoothing it out.
- Press a tablespoon of sliced strawberries into the top of each cup.
- Sprinkle about 1 teaspoon of granola over the strawberries.
Freezing
- Place the muffin pan into the freezer and chill until firm, about 2-4 hours.
- Once frozen, pop out each bite and allow to thaw for a few minutes before enjoying.
Notes
Keep bites stored in an airtight container in the freezer for up to 1-2 months. Thaw for 3-5 minutes before serving. You can also use frozen strawberries; just thaw and drain excess liquid first.
