Ingredients
  

For the Dip
  • 16 ounce refried beans
  • 1 ounce packet taco seasoning
  • 2-4 tablespoons heavy cream Adjust for consistency
  • 8 ounce bag Fiesta blend shredded cheese Divided
  • 16 ounce container guacamole
  • 16 ounce tub sour cream
  • 1 cup chunky salsa
  • 2.25 ounce can sliced olives
  • 1/2 cup cherry tomatoes, quartered
  • 3 tablespoons cilantro, chopped
  • to taste optional Tortilla chips For garnish

Method
 

Preparation
  1. Set out eight 9-ounce clear, disposable cups.
  2. Place the refried beans in a large microwave-safe bowl and heat in the microwave for 1-2 minutes, stirring frequently, until heated through.
  3. Mix in the taco seasoning, 2 tablespoons of heavy cream, and 1/4 cup of cheese until melted and combined. Stir until cooled enough to touch, adjusting the consistency with more heavy cream as needed.
Assembly
  1. Place 1/4 cup of the prepared refried beans in each cup.
  2. Scoop all guacamole into a piping bag or sealable baggie, cut the corner, and pipe a circle of guacamole on top of the beans. Fill the centers with remaining guacamole and even out.
  3. Repeat with sour cream in a new bag until each cup has a layer of sour cream.
  4. Pour 1/4 cup of salsa on each sour cream layer and even out with a spoon.
  5. Sprinkle 1/4 cup shredded cheese on top of each cup.
  6. Top with 1 tablespoon sliced olives, 1 tablespoon cherry tomatoes, and 1 teaspoon cilantro.
  7. Garnish with a tortilla chip if desired and serve.

Notes

Store covered in the refrigerator for 5-7 days. These cups can be made a day in advance for easy hosting. Consider using homemade guacamole or salsa for an enhanced flavor.
