Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
For Rolling
  • Additional granulated sugar For rolling the cookie dough balls.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until combined.
  5. Gradually add the flour mixture to the butter mixture, stirring gently until just combined.
  6. Roll the dough into small balls (about 1 inch) and roll them in granulated sugar.
  7. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 8-10 minutes, or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider adding a pinch of cinnamon. These cookies freeze beautifully when stored properly.
