  • 2 medium zucchinis Pat dry before coating for crispiness.
  • 1 cup grated Parmesan cheese Can substitute with Pecorino Romano for a sharper taste.
  • 1 cup breadcrumbs Optional; can use almond flour for gluten-free.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • as needed Olive oil spray To prevent sticking during air frying.

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchinis into fries or sticks.
  3. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. Dip the zucchini fries into the cheese mixture, ensuring they are well coated.
Cooking
  1. Spray the air fryer basket with olive oil.
  2. Arrange the zucchini fries in a single layer in the air fryer basket.
  3. Spray the tops with olive oil spray.
  4. Air fry for 10-12 minutes, flipping halfway, until they are crispy and golden brown.
  5. Serve immediately and enjoy!

Notes

Serve with marinara, ranch, or lemon-garlic yogurt dip. Store leftovers in an airtight container in the fridge for up to 2 days. Re-crisp in the air fryer at 350°F for 4-6 minutes.
