Ingredients
  

For the almond crust
  • 1.5 cups almond flour
  • 1/3 cup unsalted butter, melted
  • 2 tbsp granulated sugar
For the cheesecake filling
  • 1.5 cups dark chocolate chips
  • 1/4 cup heavy cream for melting with chocolate
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 ripe bananas mashed
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup caramel sauce for topping
  • 1/4 cup heavy cream for ganache
  • to taste sliced bananas for garnish
  • to taste chopped roasted almonds for garnish
  • to taste additional caramel sauce for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, melted butter, and sugar.
  3. Press this mixture firmly into the bottom of a springform pan to form a crust.
  4. Bake for about 10 minutes until slightly firm.
  5. Melt the dark chocolate chips with the heavy cream until smooth. Spread this chocolate mixture over the cooled crust.
  6. Chill in the fridge while preparing the filling.
Filling
  1. In another bowl, beat together the softened cream cheese and sugar until creamy.
  2. Mix in the mashed bananas and vanilla extract until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Pour the banana mixture over the chilled chocolate layer and bake for about 50 minutes.
  5. Let it cool before refrigerating for at least three hours to set.
Topping
  1. Prepare the ganache by heating the caramel sauce and heavy cream until smooth.
  2. Spread ganache over the chilled cheesecake and top with sliced bananas and chopped roasted almonds.
  3. Drizzle with additional caramel sauce to serve.

Notes

Ensure cream cheese is at room temperature for a creamy texture. Optionally add a touch of cinnamon for flavor.
