Cake Ingredients
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Make sure it's soft for easy creaming.
  • 4 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
Filling and Garnish
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • optional to taste sliced almonds for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line a 9-inch cake pan.
  2. Cream together the butter and granulated sugar until fluffy and aerated.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the almond flour, all-purpose flour, and baking powder.
Baking
  1. Gradually incorporate the flour mixture into the wet ingredients, stirring until the batter is smooth.
  2. Pour the mixture into the prepared pan and bake for 25 to 30 minutes, until golden brown and a toothpick inserted in the center comes out clean.
Assembly
  1. Once baked, let the cake cool completely, then slice it in half horizontally.
  2. Beat the mascarpone cheese with the powdered sugar until velvety and smooth, then spread this mixture between the cake layers.
  3. Garnish with sliced almonds and a dusting of powdered sugar before serving.

Notes

Serve fresh, perhaps with whipped cream or vanilla ice cream. Store wrapped in plastic in the refrigerator for up to three days. You can freeze slices but thaw them in the fridge before enjoying.
