Ingredients
  

Dry Ingredients
  • 2 cups almond flour Finely ground for best texture
  • 1 cup granulated sugar For sweetness
  • 1/4 cup powdered sugar For dusting cookies
  • 1 pinch salt Enhances flavor
Wet Ingredients
  • 2 large egg whites At room temperature
  • 1 teaspoon almond extract For additional almond flavor
  • 1 tablespoon Amaretto liqueur Optional for flavor enhancement

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, granulated sugar, and a pinch of salt.
  3. In a separate bowl, beat the egg whites until soft peaks form.
  4. Gently fold the beaten egg whites, almond extract, and Amaretto (if using) into the almond flour mixture until a dough forms.
Baking
  1. Using a small cookie scoop or teaspoon, form small balls of dough and roll them in powdered sugar.
  2. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  3. Lightly press the tops to flatten slightly.
  4. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden.
  5. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Dust the cooled cookies with additional powdered sugar if desired, and serve.

Notes

Store the cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months. Ensure egg whites are at room temperature for better volume when beaten. For variations, consider adding cocoa powder or orange zest.
