  • 400 g apples
  • 250 g mascarpone Ensure it's at room temperature for easier mixing.
  • 100 g sugar
  • 4 pieces eggs
  • 150 g flour
  • 1 sachet baking powder

Method
 

Preparation
  1. Preheat your oven to 180 degrees Celsius.
  2. Peel the apples and cut them into small pieces. Cook in a saucepan over low heat until tender, then set aside to cool.
  3. In a bowl, mix flour, baking powder, and sugar.
  4. Add eggs one by one, mixing with an electric mixer until well combined.
  5. Fold in the mascarpone to obtain a smooth batter.
  6. Gently incorporate the cooked apples into the batter.
Baking
  1. Pour the batter into a buttered or parchment-lined mold.
  2. Bake for 30 minutes or until golden and a knife inserted comes out clean.
  3. Allow to cool in the mold for 10 minutes before unmolding.
Serving
  1. Slice into pieces and serve warm or cold, optionally with whipped cream or ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Rewarm in the oven before serving for best results. For additional flavor, sauté apples with a hint of cinnamon or brandy.
