  • 7 tbsp butter, room temperature Make sure it's at room temperature for better mixing.
  • 2 3/4 cups flour
  • 2 pieces apples, peeled and chopped Use your favorite type of apple.
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • 1 1/2 tsp baking powder
  • Powdered sugar for serving Dust cookies before serving for added sweetness.

Preparation
  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl, beat together the eggs with the sugar and vanilla using a hand mixer until light, pale, and fluffy.
  3. Add the butter and whisk until smoothly incorporated.
  4. In a separate bowl, whisk together the flour, cinnamon, and baking powder. Add a pinch of salt.
  5. Gradually combine the dry ingredients with the wet ones to create a thick, smooth cookie dough.
  6. Gently fold in the chopped apples.
Baking
  1. Scoop spoonfuls of the dough onto a parchment-lined baking pan, giving them room to spread.
  2. Bake for 20 minutes or until golden brown.
  3. Dust with powdered sugar before serving.

Notes

Store cooled cookies in an airtight container at room temperature for 3-4 days. Consider hiding a few for late-night cravings.
