  • 1 large Gala apple, sliced Sweet flavor

  • 1/2 cup dried cranberries
Dressing Ingredients
  • 1/4 cup mayo Can use gluten-free mayo if needed
  • 1/3 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons honey Add more to taste

Method
 

Preparation
  1. Gather the salad ingredients in a large bowl, skipping the dressing for now.
  2. Add baby spinach, sliced Granny Smith and Gala apples, cashews, and dried cranberries.
Dressing
  1. In a mason jar, combine mayo, balsamic vinegar, Dijon mustard, lemon juice, and honey.
  2. Secure the lid and shake well, or whisk with a fork until combined. Taste and adjust sweetness or creaminess as desired.
Assembly
  1. Drizzle the dressing over the salad and toss gently to coat everything evenly.

Notes
