Delicious little pockets filled with spiced apple filling and wrapped in flaky pie crust, perfect for any occasion.

Ingredients
  

For the filling
  • 2-3 pieces apples, peeled and diced Use a mix of apples for richer flavor, like Granny Smith and Honeycrisp.
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
For the crust
  • 1 package pre-made pie crusts
  • 1 piece egg (for egg wash) Beaten for brushing on top.
Optional toppings
  • to taste caramel sauce for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the diced apples with sugar, cinnamon, and lemon juice until fully coated.
  3. Roll out the pie crusts and cut them into small circles (about 4 inches in diameter).
  4. Place a generous spoonful of the apple mixture in the center of each circle.
  5. Fold the dough over to create pockets and seal the edges by pressing them together.
  6. Brush the tops with the beaten egg.
Baking
  1. Bake for 20-25 minutes, or until golden brown.
Serving
  1. Serve warm and optionally drizzle with caramel sauce.

Notes

If there are any leftovers, store in an airtight container for up to 2 days at room temperature, or in the refrigerator for up to a week. Reheat in the oven to regain crispiness.
