  • 150 g sugar
  • 150 g butter, softened Ensure butter is at room temperature for best texture
  • 2 pieces eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 300 ml pastry cream or cherry jam You can substitute with other fillings like chocolate or lemon curd

Method
 

Preparation
  1. Beat the softened butter and sugar in a bowl until creamy and light.
  2. Introduce the eggs and vanilla, blending until incorporated.
  3. Gradually sift in the flour and baking powder, mixing until a smooth dough forms.
  4. Divide the dough into two parts and press one portion into a prepared pan.
  5. Spread the pastry cream or cherry jam over the base before topping with the remaining dough.
Baking
  1. Bake in a preheated oven at 180°C for 35–40 minutes until golden.

Notes

Store in an airtight container at room temperature for up to three days. For longer storage, refrigerate for a week or freeze for up to a month. Brush the top with simple syrup for a glossy finish.
