Ingredients
  

Dough Ingredients
  • 3¾ – 4 cups all-purpose flour
  • ¾ cup + 2 Tbsp warm whole milk (110°F) Warm milk helps activate the yeast.
  • cup granulated sugar
  • 1 large egg
  • tsp salt
  • tsp instant yeast Active dry yeast can be used, proof in warm milk first.
  • 3 Tbsp unsalted butter (softened)
  • 1 tsp vanilla extract
  • as needed cups Neutral oil for frying (about 2 inches deep) Maintain oil at 350°F for best frying results.
  • as needed cup powdered sugar (for dusting)

Method
 

Preparation
  1. Combine dry ingredients: flour, sugar, salt, and instant yeast in a mixing bowl.
  2. Add warm milk, egg, butter, and vanilla to the dry ingredients.
  3. Knead the dough until smooth, either by hand or using a stand mixer.
  4. Let the dough rise in an oiled bowl until doubled in size (1 to 1.5 hours).
  5. Roll the dough to ½ inch thick and cut into 2-2½ inch squares.
  6. Heat oil to 350°F in a deep pan.
Cooking
  1. Fry beignets in small batches for 1-2 minutes per side until golden.
  2. Drain on paper towels, then dust with powdered sugar before serving warm.

Notes

Serve beignets hot, ideally on the same day. If storing, keep in an airtight container at room temperature for up to 24 hours. Reheat in the oven to regain crispness before dusting with powdered sugar.
