Ingredients
  

Cake Base
  • 4 pieces Eier Large eggs
  • 180 g Zucker Granulated sugar
  • 1 packet Vanillezucker Vanilla sugar
  • 180 g Mehl All-purpose flour
  • 1 tsp Backpulver Baking powder
  • 80 ml Öl Vegetable oil
  • 80 ml Milch Milk
Cream Layer
  • 500 g griechischer Joghurt Greek yogurt
  • 400 ml Schlagsahne Heavy cream
  • 250 g Mascarpone Mascarpone cheese
  • 120 g Puderzucker Powdered sugar
  • 2 packets Sahnesteif Whipped cream stabilizer
Fruits and Garnish
  • 250 g Blaubeeren Blueberries
  • 200 g Himbeeren Raspberries
  • to taste Frische Himbeeren zur Dekoration Fresh raspberries for decoration
  • to taste Frische Blaubeeren zur Dekoration Fresh blueberries for decoration

Method
 

Preparation
  1. Beat the eggs, sugar, and vanilla sugar until creamy.
  2. Gradually fold in the oil and milk.
  3. Sift in the flour and baking powder, and gently combine.
  4. Pour the batter into a greased rectangular baking dish.
Baking
  1. Bake at 175 °C for about 20 to 25 minutes until cooked through.
  2. Let the cake cool completely.
Cream Preparation
  1. Whip the cream until stiff peaks form and set aside.
  2. Whisk together the mascarpone, yogurt, and powdered sugar until creamy.
  3. Fold the whipped cream into the mascarpone mixture.
  4. Gently mix in the blueberries and raspberries.
Assembly
  1. Spread the berry cream over the cooled base.
  2. Chill for at least 4 hours before serving.
Serving
  1. Slice into squares and garnish with fresh berries.

Notes

For an extra touch, drizzle honey or maple syrup before serving. Additional toppings like crushed nuts or granola can add a nice crunch.
