Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar Increase to 1/2 cup for a sweeter cornbread.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/4 cup butter (melted) Can substitute with melted coconut oil or vegetable oil.
  • 2 large eggs Can be substituted with 1/4 cup of unsweetened applesauce or a flaxseed egg.

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with a light greasing.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, melted butter, and eggs.
Mixing and Baking
  1. Gently pour the wet ingredients into the dry, stirring until just combined.
  2. Pour the batter into the prepared dish and bake for 20-25 minutes.
  3. Check for doneness with a toothpick; it should come out clean.
  4. Let it cool for a few moments before slicing.

Notes

For added texture, consider folding in some fresh corn kernels or jalapeños. Storage: Keep leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
