Preparation
  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine the crushed graham crackers, one tablespoon of white sugar, and melted butter. Mix well.
  3. Press the mixture into the bottom of each cupcake liner to form a crust.
Filling
  1. In a separate bowl, beat the softened cream cheese until smooth.
  2. Gradually add the remaining sugar and mix until dissolved.
  3. Stir in the vanilla essence, then add the eggs one at a time, mixing gently.
  4. Spoon the filling over the prepared crusts until nearly full.
