Preparation
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a bowl, combine the crushed graham crackers, one tablespoon of white sugar, and melted butter. Mix well.
- Press the mixture into the bottom of each cupcake liner to form a crust.
Filling
- In a separate bowl, beat the softened cream cheese until smooth.
- Gradually add the remaining sugar and mix until dissolved.
- Stir in the vanilla essence, then add the eggs one at a time, mixing gently.
- Spoon the filling over the prepared crusts until nearly full.
Baking
- Bake in the preheated oven for about 30 minutes, until the edges are set and the centers jiggle slightly.
- Let them cool at room temperature, then refrigerate for at least 2 hours.

For best results, ensure all ingredients are at room temperature. Avoid over-mixing after adding the eggs. You can enhance the flavor by adding lemon zest or liqueurs.
