Brownie Layer
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 cup unsweetened cocoa powder
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
Caramel Layer
  • 30 pieces caramels, unwrapped
  • 2 tablespoons heavy cream
Cookie Dough Layer
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup flour
  • 1/2 cup mini semi-sweet chocolate chips
Chocolate Topping
  • 8 oz mini semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Method
 

Preparation
  1. Prepare an 8x8 pan lined with parchment and preheat the oven to 325°F.
  2. For the brownie layer, whisk together sugar and melted butter until combined.
  3. Add salt, cocoa powder, eggs, and vanilla; mix until glossy and uniform.
  4. Fold in flour and spread into the prepared dish.
  5. Bake for 20-25 minutes until just set, with the center still slightly soft.
Caramel Layer
  1. Melt caramels with heavy cream in the microwave in short bursts, stirring until smooth.
  2. Pour warm caramel over the baked brownie and let sit for 10-15 minutes.
  3. Freeze for 25 minutes to firm the layer.
Cookie Dough Layer
  1. Cream softened butter, brown sugar, and white sugar until light and airy.
  2. Add heavy cream and vanilla, then stir in salt and flour until a soft dough forms.
  3. Fold in chocolate chips and gently press the dough over the cooled caramel.
Finishing Touch
  1. Melt mini semi-sweet chocolate chips with vegetable oil until glossy.
  2. Pour and smooth over the cookie layer and chill until set.
  3. Slice with a sharp, warm knife and serve.

Notes

For optimal flavor and texture, allow bars to come to room temperature before serving. Store in an airtight container and refrigerate for up to 5 days.
