Ingredients
  

For the Cake
  • 250 g flour
  • 40 g cocoa powder
  • 180 g sugar
  • 1 packet baking powder
  • 4 pieces eggs
  • 180 ml milk
  • 150 ml vegetable oil
For the Cherry Layer
  • 2 jars sour cherries (approximately 700 g net weight)
  • 500 ml cherry juice
  • 2 packets vanilla pudding powder
  • 80 g sugar (for cherry layer)
For the Cream Topping
  • 600 ml whipped cream
  • 3 packets cream stabilizer
  • 2 packets vanilla sugar
  • 80 g dark chocolate, grated for sprinkling on top
  • some pieces cherries for decoration

Method
 

Preparation
  1. Preheat your oven to 180°C (fan heat).
  2. In a bowl, mix the flour, cocoa powder, and baking powder.
  3. In another bowl, whisk the eggs with sugar until fluffy.
  4. Gradually add in the milk and oil, then gently fold in the dry ingredients.
  5. Pour the batter into a greased baking sheet and bake for about 25 minutes.
  6. Let it cool completely.
Cherry Layer Preparation
  1. Drain the cherries, reserving the juice.
  2. Dissolve the pudding powder in a bit of cherry juice.
  3. In a saucepan, bring the remaining juice and sugar to a boil.
  4. Stir in the pudding mixture and let it cook briefly.
  5. Fold in the cherries and spread this mixture over the cooled cake.
Whipped Cream Topping
  1. Whip the cream with vanilla sugar and stabilizer until stiff.
  2. Evenly spread it over the cherry layer.
Final Touches
  1. Sprinkle with chocolate shavings and decorate with additional cherries as desired.
  2. Chill the cake for at least 2 hours before cutting it into squares and serving.

Notes

When making the frosting, whipping the cream until it’s just the right stiffness is key; this helps achieve that beautiful finish. You can add a splash of Kirsch for extra flavor. A sprinkle of grated chocolate makes everything look divine!
