  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1/2 cup milk (or plant-based drink)
  • 1 cup corn flour
  • 1/2 cup wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Combine the corn kernels, eggs, milk, melted butter, sugar, and vanilla in a blender. Blend until smooth.
  3. In a separate bowl, mix the corn flour, wheat flour, baking powder, and salt.
  4. Pour the dry mixture into the blender and pulse to integrate everything without overmixing.
  5. Grease your mold, pour in the mixture, and bake for 40-45 minutes.
Cooling
  1. Check with a toothpick; if it comes out clean, let it cool before unmolding.

Notes

Serve warm with a pat of butter, or enjoy with chili or soup. Can be stored in an airtight container for a day or two or refrigerated for longer storage.
