Preparation
- Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Combine the corn kernels, eggs, milk, melted butter, sugar, and vanilla in a blender. Blend until smooth.
- In a separate bowl, mix the corn flour, wheat flour, baking powder, and salt.
- Pour the dry mixture into the blender and pulse to integrate everything without overmixing.
- Grease your mold, pour in the mixture, and bake for 40-45 minutes.
Cooling
- Check with a toothpick; if it comes out clean, let it cool before unmolding.
Notes
Serve warm with a pat of butter, or enjoy with chili or soup. Can be stored in an airtight container for a day or two or refrigerated for longer storage.
