Blueberry Cream Cheese Tartlets

Ingredients
  

For the tart crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is cold for a flaky texture.
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1-2 tablespoons cold water Add as needed for dough consistency.
  • Pinch of salt
For the blueberry filling
  • 1 1/2 cups fresh or frozen blueberries No need to thaw frozen blueberries.
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
For the cream cheese frosting
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
Optional garnish
  • powdered sugar For dusting.
  • fresh blueberries For decoration.
  • lemon zest Optional for added flavor.

Method
 

Preparation of the tart crust
  1. Preheat your oven to 350 degrees F.
  2. In a mixing bowl, combine the flour, powdered sugar, and a pinch of salt.
  3. Cut in the cold butter until crumbly.
  4. Add the egg yolk and cold water, mixing until combined.
  5. Chill the dough in the fridge for about 20 minutes.
Baking the tart shells
  1. Roll out the chilled dough and press it into tartlet pans.
  2. Prick the bottoms with a fork.
  3. Bake for 12-15 minutes or until golden.
Making the blueberry filling
  1. In a saucepan over medium heat, combine blueberries, sugar, lemon juice, cornstarch, and water.
  2. Stir until the mixture thickens, then set aside to cool.
Making the cream cheese frosting
  1. Beat together softened cream cheese and butter until smooth.
  2. Add in powdered sugar and vanilla extract until creamy.
Assembling the tartlets
  1. Once tart shells have cooled, spoon in the blueberry filling.
  2. Pipe the cream cheese frosting on top.
  3. Garnish with fresh blueberries and powdered sugar.

Notes

These tartlets can be made ahead of time and are best served chilled. They can be stored in an airtight container in the refrigerator for 2-3 days.
