Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is cold for a flakier crust.
  • 1/4 cup powdered sugar
  • 1 each egg yolk
  • 2 tablespoons cold water
  • a pinch salt
For the filling
  • 1 1/2 cups fresh or frozen blueberries Frozen blueberries work well; thaw and drain slightly.
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
For the cream cheese frosting
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
For garnish (optional)
  • Powdered sugar For dusting.
  • Fresh blueberries For decoration.
  • Lemon zest For enhanced flavor.

Method
 

Prepare the crust
  1. Preheat your oven to 350 degrees F.
  2. In a mixing bowl, combine the flour, powdered sugar, and a pinch of salt.
  3. Cut in the cold butter until the mixture resembles fine crumbs.
  4. Add the egg yolk and cold water, mixing gently until the dough comes together.
  5. Chill the dough for 20 minutes.
  6. Roll out the dough and press it into tartlet pans, pricking the bottoms with a fork.
  7. Bake for 12-15 minutes or until the shells are light golden brown.
  8. Let them cool.
Prepare the filling
  1. Combine the blueberries, granulated sugar, lemon juice, cornstarch, and water in a saucepan over medium heat.
  2. Stir until the mixture thickens into a glossy filling.
Make the frosting
  1. In a bowl, beat together the softened cream cheese and butter until smooth.
  2. Add in the powdered sugar and vanilla extract; mix until creamy.
Assemble the tartlets
  1. Spoon the blueberry filling into each tart shell.
  2. Top with cream cheese frosting and optional garnishes.
  3. Chill before serving.

Notes

Store any leftovers in the fridge with plastic wrap for up to 3-4 days. For a twist, swap blueberries with other fruits like strawberries or raspberries.
