Ingredients
  

Main Ingredients
  • 500 g bacon (diced) For best results, use crispy bacon.
  • 1 unit onion (diced)
  • 1 unit capsicum (diced)
  • 12 large eggs
  • 1 cup milk
  • 2 cups diced cooked potatoes You can use leftover potatoes.
  • 2 units green onions (chopped)
  • 2 cups grated cheese Any variety works well.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 180°C and line a baking dish with parchment paper.
  2. In a hot pan, sauté the diced bacon, onion, and capsicum until golden.
  3. Transfer the bacon mix into the baking dish.
  4. Sprinkle the diced cooked potatoes and chopped green onions over the bacon.
Mixing
  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Pour the egg mixture over the bacon and potato blend.
Baking
  1. Bake for 30 minutes.
  2. Sprinkle grated cheese on top and bake for an additional 10 minutes until bubbly.
Serving
  1. Allow cooling slightly before slicing and serving warm.

Notes

Feel free to customize with different vegetables or cheese. Leftovers can be stored in the fridge for up to 3 days or frozen.
