  • 2 1/4 cups powdered sugar Sifted for a smoother texture.
  • 1 1/3 cups toasted pecans, chopped Toast in a dry skillet for enhanced flavor.

Preparation
  1. Gather all ingredients, ensuring they are fresh.
  2. In a medium-sized saucepan, combine the butter, heavy cream, granulated sugar, brown sugar, salt, and cinnamon.
  3. Stir together over medium heat until the mixture is velvety.
  4. Bring the mixture to a boil until it reaches a temperature of 235 degrees Fahrenheit (soft ball stage).
  5. Remove from heat and add vanilla extract without stirring.
  6. Let the mixture cool to about 105 degrees Fahrenheit for approximately 30 minutes.
  7. Stir vigorously for 1-2 minutes until thickened.
  8. Gradually add powdered sugar and toasted pecans, mixing until combined.
  9. Spoon the mixture onto parchment paper and shape it into a log.
Setting
  1. Refrigerate the fudge for 1-2 hours until set.
  2. Slice into pieces and serve chilled.
  3. For easier cutting, let the fudge warm slightly at room temperature before slicing.

Notes

Store fudge in an airtight container in the refrigerator for up to two weeks. For enhanced flavor, consider adding a tablespoon of milk after the vanilla.
