  • 1.5 cups graham cracker crumbs

  • 0.25 cups powdered sugar For dusting before serving.

Method
 

Preparation of crust
  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until resembling wet sand.
  3. Press the mixture evenly into a lined pan.
Preparation of filling
  1. In a separate bowl, blend cream cheese and 1/2 cup granulated sugar until smooth.
  2. Add eggs one at a time, blending well after each addition.
  3. Stir in vanilla extract, then fold in the ricotta cheese and mini chocolate chips.
Baking
  1. Pour the filling over the crust and bake for 40-45 minutes.
  2. The edges should set while the center remains slightly jiggly.
Cooling
  1. Allow the bars to cool to room temperature.
  2. Refrigerate for at least four hours before serving.
Serving
  1. Dust lightly with powdered sugar before serving.
  2. Serve with a warm cup of coffee or sweet dessert wine.
