Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
For the cheesecake filling
  • 2 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Stir until it resembles wet sand.
  3. Press the mixture firmly into the bottom of the prepared baking dish.
Cheesecake Filling
  1. In a large bowl, beat the cream cheese until creamy and smooth.
  2. Add in 1 cup of sugar and the vanilla extract, mixing until well combined.
  3. Add the eggs one at a time, beating well after each addition.
  4. Gently fold in the diced apples and cinnamon until evenly distributed.
  5. Pour this cream cheese mixture over the prepared crust in the baking dish.
  6. Drizzle the caramel sauce over the top and swirl it through the mixture for a marbled effect.
Baking
  1. Bake for 30-35 minutes, or until set and slightly golden.
  2. Allow to cool completely before cutting into bars.
  3. Serve with extra caramel drizzled on top if desired.
