Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Stir until it resembles wet sand.
- Press the mixture firmly into the bottom of the prepared baking dish.
Cheesecake Filling
- In a large bowl, beat the cream cheese until creamy and smooth.
- Add in 1 cup of sugar and the vanilla extract, mixing until well combined.
- Add the eggs one at a time, beating well after each addition.
- Gently fold in the diced apples and cinnamon until evenly distributed.
- Pour this cream cheese mixture over the prepared crust in the baking dish.
- Drizzle the caramel sauce over the top and swirl it through the mixture for a marbled effect.
Baking
- Bake for 30-35 minutes, or until set and slightly golden.
- Allow to cool completely before cutting into bars.
- Serve with extra caramel drizzled on top if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to a week. Freeze in individual squares for longer storage. For variations, try using different types of apples or including nuts in the mixture.
