Ingredients
  

For the crust
  • 1 1/2 cups quick oats
  • 2 1/4 cups flour
  • 1 1/2 cups brown sugar
  • 1 1/4 cups butter melted
For the filling
  • 1/4 cup butter for filling, melted
  • 1 cup brown sugar for filling
  • 1/4 cup milk
  • 2 tsps vanilla
  • 2 tbsp flour for filling

Method
 

Preparation of the crust
  1. Melt 1 1/4 cups butter completely.
  2. Mix melted butter with oats, 2 1/4 cups flour, and 1 1/2 cups brown sugar.
  3. Press 2/3 of this mixture into a greased 9x13 pan and bake at 325°F for 10 minutes; allow it to cool.
  4. Set aside remaining 1/3 of the crust for topping.
Preparation of the filling
  1. Melt 1/4 cup butter in a saucepan.
  2. Stir in 1 cup brown sugar until smooth (about 1 minute).
  3. Add 1/4 cup milk, 2 tsp vanilla, and 2 tbsp flour one at a time, stirring after each addition.
  4. Bring the mixture to a slow boil for about 3 minutes until it thickens, stirring continuously.
  5. Remove from heat, and once crust is cool, pour the caramel filling over it.
  6. Sprinkle the remaining crust mixture over the top.
  7. Bake at 300°F for an additional 20 minutes.
  8. The bars may appear runny but will firm up when cool.

Notes

Add flaky sea salt on top for a sparkling finish, or pair with dark coffee or cardamom chai to complement the flavors. Store in an airtight container for freshness.
