Preparation
  1. Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
  2. Cut cauliflower into smaller florets and pulse in a food processor until they resemble rice.
  3. Transfer cauliflower rice to a kitchen towel and wring out as much moisture as possible.
  4. In a large mixing bowl, combine cauliflower rice, cheddar cheese, green onions, garlic powder, onion powder, salt, pepper, beaten egg, and almond flour.
  5. Mix until all ingredients are well incorporated.
  6. Form the mixture into small patties and place them on the prepared baking sheet.
  7. Bake in the preheated oven for 20-25 minutes, flipping halfway through.
  8. For extra crispy texture, bake for an additional 5 minutes.
  9. Remove from the oven and let cool slightly before serving.

Notes

For best results, squeeze out as much moisture as possible from the cauliflower to ensure crispy hash browns. They can be served with scrambled eggs or topped with avocado and chili flakes.
