Cheesecake with Caramel and Christmas Crack

This delightful Cheesecake combines creamy cheesecake, crunchy Christmas crack, and luscious caramel, perfect for holiday gatherings.

Ingredients
  

Crust
  • 250 g Arnotts Salada Original crackers Reserve 6 crackers for topping later.
  • 180 g unsalted butter, melted Used to bind the cracker crust.
Cheesecake Filling
  • 60 ml cold water For dissolving gelatine.
  • 3 tsp gelatine powder Used to set the cheesecake.
  • 500 g cream cheese, at room temperature Ensure it's soft for easy mixing.
  • 140 g caster sugar To sweeten the filling.
  • 500 ml thickened cream Adds creaminess.
  • 2 tbsp store bought caramel spread or Nestle Top n Fill Caramel For drizzling over the cheesecake.
Christmas Crack Topping
  • 160 g brown sugar To create the sweet topping.
  • 125 g unsalted butter, chopped Combined with sugar for the caramel layer.
  • 2 x 180g pkt dark chocolate, melted For topping the Christmas crack.
  • 100 g white chocolate, melted Drizzle on top for a festive finish.
  • 50 g green and red M&Ms Minis For decorating the dessert.

Method
 

Preparation
  1. Invert the base of a 20cm round springform cake pan, line it with baking paper, and secure.
  2. Reserve 6 crackers for later use.
  3. Process remaining crackers until finely crushed. Combine with melted butter and press into the base of the pan.
  4. Chill the crust in the fridge for about 30 minutes.
Cheesecake Filling
  1. Mix cold water with gelatine powder and heat to dissolve completely.
  2. Beat cream cheese and caster sugar until smooth.
  3. Gently add thickened cream and the gelatine mixture to the cream cheese mixture.
  4. Spoon mixture over the chilled crust and drizzle with caramel. Chill for 8 hours or overnight.
Christmas Crack
  1. Preheat oven to 180C and line a slice pan with baking paper.
  2. Lay reserved crackers in a single layer in the prepared pan.
  3. In a saucepan, combine brown sugar and chopped butter, heating until smooth. Bring to a gentle boil for 30 seconds and pour over crackers.
  4. Bake for 5 minutes, then pour melted dark chocolate over the top and chill until set.
  5. Drizzle with melted white chocolate and sprinkle with green and red M&Ms.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Do not rush the chilling time. Consider adding toppings like sea salt or nuts for extra flavor.
