Ingredients
  

Pasta and Filling
  • 12 sheets lasagna sheets, cooked
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded divided
  • 1/2 cup parmesan cheese, grated
  • 1 cup Alfredo sauce
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning
  • to taste Salt & black pepper
  • 2 tbsp fresh parsley, chopped for garnish

Method
 

Preparation
  1. Season the shrimp with paprika, Italian seasoning, salt, and pepper.
  2. Sauté the shrimp in olive oil with minced garlic until pink and aromatic.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella, and parmesan. Fold in the cooked shrimp.
Assembly
  1. Lay out the cooked lasagna sheets and spoon the filling down the center. Roll them up tightly.
  2. Place the roll-ups in a baking dish, cover with Alfredo sauce, and sprinkle with remaining mozzarella.
Baking
  1. Bake at 375°F (190°C) for about 20 minutes until bubbling and golden.
Serving
  1. Sprinkle with chopped parsley before serving and enjoy warm.

Notes

To enhance the dish, consider adding lemon zest to the filling or mixing in sautéed spinach. You can also swap shrimp for grilled chicken or add roasted vegetables for a twist.
