Ingredients
  

For the crust
  • 9 sheets graham cracker sheets
  • 1/2 cup melted butter
  • 1 tablespoon sugar
For the filling
  • 16 ounces cream cheese, softened Ensure cream cheese is at room temperature for easy blending.
  • 8 ounces Cool Whip
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice
  • 21 ounces cherry pie filling

Method
 

Preparation
  1. Place the graham crackers in a food processor and process into fine crumbs.
  2. In a medium bowl, mix the crumbs with melted butter and sugar until well combined.
  3. Line an 8x8 pan with parchment paper and press the graham cracker mixture evenly into the bottom of the pan. Chill in the refrigerator.
Making the Filling
  1. In a large bowl, blend the softened cream cheese with Cool Whip, powdered sugar, and lemon juice until smooth.
  2. Spread the cream cheese mixture over the chilled crust and refrigerate for about five minutes.
Topping
  1. Spoon the cherry pie filling over the cream cheese layer and spread gently to cover.
Chilling
  1. Chill the cheesecake for at least four hours to allow it to set.
Serving
  1. Slice into squares and present on dessert plates. Optionally garnish with mint leaves or a dusting of powdered sugar.

Notes

Ensure your cream cheese is softened for the best texture. For a fresh touch, consider making your own cherry topping. You can add crushed nuts to the crust for added texture.
