Preparation
- Preheat your oven to 375°F.
- In a large mixing bowl, cream together softened butter and confectioners sugar using an electric mixer until smooth and creamy.
- Gently fold in the all-purpose flour and corn starch until a sticky dough forms.
- Stir in the chopped maraschino cherries and mini chocolate chips until evenly distributed.
- Roll the cookie dough into 1-inch balls and place them on a non-stick baking sheet with at least 2 inches between them.
- Gently flatten each cookie dough ball with a fork.
Baking
- Bake in the preheated oven for 7-9 minutes, until the tops look dry but not shiny.
- Once baked, carefully transfer the cookies to parchment paper on the counter to cool.
