Filling
  • 16 oz cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1 cups powdered sugar Adjust for sweetness if desired.
  • 1 tsp vanilla extract Pure vanilla extract is recommended.
  • 1 cups whipped cream or whipped topping For a richer texture, use real whipped cream.
  • 1 can cherry pie filling Can substitute for fresh fruit if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed graham crackers or vanilla wafers, pecans, and melted butter.
  3. Press this mixture firmly into the bottom of a 9x13 inch dish for the crust.
  4. Bake the crust for about 10 minutes and then allow it to cool.
Filling
  1. In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Fold in the whipped cream until well combined.
  3. Spread the cream cheese mixture over the cooled crust evenly.
  4. Top with cherry pie filling.
Chilling
  1. Chill the cheesecake in the refrigerator for at least 4 hours to set.
