Ingredients
  

For the crust
  • 1 cup Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
For the cheesecake filling
  • 16 oz Cream cheese, softened Ensure it's at room temperature
  • 1/2 cup Granulated sugar
  • 2 large Eggs Add one at a time
  • 1/2 cup Sour cream
  • 1/4 cup Chopped pistachios Plus extra for garnish, if desired
For the topping
  • 1 can Cherry pie filling Or any preferred fruit topping

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until a sandy consistency forms.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake for 8 minutes, then allow to cool.
Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in sour cream and chopped pistachios.
  4. Pour the cheesecake filling over the cooled crust and spread evenly.
  5. Bake for 35-40 minutes until set in the center.
Final Touches
  1. Let the cheesecake bars cool to room temperature, then refrigerate for at least 3 hours.
  2. Spread the cherry pie filling over the chilled cheesecake before cutting into bars.

Notes

For an intense pistachio flavor, add a teaspoon of pistachio extract. Garnish with extra chopped pistachios for better presentation.
