Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan with grease or parchment paper.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the chilled, cubed butter to the dry ingredients and blend until the mixture resembles soft sand.
- Stir in the egg yolk, vanilla extract, and almond extract until combined to form a slightly crumbly dough.
- Set aside a third of this dough for the crumble topping, and press the rest into the bottom of the prepared baking pan.
- Bake the crust for 10 to 12 minutes until lightly firmed.
Assembly
- Mix the dried cherries and white chocolate chips in a small bowl.
- Once the crust has cooled slightly, sprinkle the cherry and chocolate mixture over the crust.
- Crumble the reserved dough over the top of the cherries and white chocolate.
Baking
- Return the pan to the oven and bake for an additional 20 to 25 minutes, until the top is golden and the filling bubbles.
- Allow the bars to cool completely on a wire rack before lifting them from the pan and cutting into squares or rectangles.
Notes
Garnish with powdered sugar or a drizzle of melted white chocolate for added appeal. Store wrapped in parchment paper in an airtight container at room temperature for up to a week or refrigerate for longer storage.
