Ingredients
  

Crust and Topping
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter, chilled and cubed Ensure butter is chilled for ideal texture
  • 0.5 teaspoons baking powder
  • 1 pinch salt
  • 1 large egg yolk
  • 0.5 teaspoons vanilla extract
  • 0.25 teaspoons almond extract
  • 1 cup dried tart cherries, roughly chopped
  • 0.5 cups white chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan with grease or parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the chilled, cubed butter to the dry ingredients and blend until the mixture resembles soft sand.
  4. Stir in the egg yolk, vanilla extract, and almond extract until combined to form a slightly crumbly dough.
  5. Set aside a third of this dough for the crumble topping, and press the rest into the bottom of the prepared baking pan.
  6. Bake the crust for 10 to 12 minutes until lightly firmed.
Assembly
  1. Mix the dried cherries and white chocolate chips in a small bowl.
  2. Once the crust has cooled slightly, sprinkle the cherry and chocolate mixture over the crust.
  3. Crumble the reserved dough over the top of the cherries and white chocolate.
Baking
  1. Return the pan to the oven and bake for an additional 20 to 25 minutes, until the top is golden and the filling bubbles.
  2. Allow the bars to cool completely on a wire rack before lifting them from the pan and cutting into squares or rectangles.

Notes

Garnish with powdered sugar or a drizzle of melted white chocolate for added appeal. Store wrapped in parchment paper in an airtight container at room temperature for up to a week or refrigerate for longer storage.
