Ingredients
  

For the dough
  • 1 cup unsalted butter, softened Ensure the butter is softened but not melted.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries Do not use fresh cranberries.
  • 1 tablespoon orange zest
  • 1/2 cup chopped nuts (optional) Consider walnuts or pecans for added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually blend it into the butter mixture.
  5. Gently fold in the dried cranberries, orange zest, and chopped nuts.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, giving them space to spread.
Baking
  1. Bake for 10-12 minutes until the edges are golden brown.
  2. Allow cookies to rest on the baking sheet for a few minutes, then transfer to wire racks to cool completely.

Notes

These cookies are best served warm and fresh out of the oven. They also make a lovely gift when placed in a decorative box or tin.
