  • 1/2 cup unsalted butter, room temperature Ensure butter is at room temperature for easy blending.
  • 1 cup packed light brown sugar
  • 1 cup old-fashioned oats Do not use quick oats.
  • 1 Tbsp all-purpose flour
  • 1 tsp all-purpose flour Add to total flour measure.
  • 1/2 tsp fine salt
  • 1 large egg, room temperature
  • 1 tsp vanilla extract or vanilla bean paste Adds flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line your baking sheets with silicone mats or parchment paper.
  2. In a large frying pan over medium heat, combine the butter and brown sugar, stirring gently until melted and smooth.
  3. Remove the pan from heat and stir in the old-fashioned oats, flour, and fine salt.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Spoon 1 teaspoon of batter onto the prepared baking sheets, leaving 2 inches between each dollop.
Baking
  1. Bake in the preheated oven for about 5-7 minutes or until the edges turn a golden brown.
  2. Let the cookies cool on the sheets for 15 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days, or freeze for up to a month. Enjoy with cold milk or hot tea.
