Preparation
- Preheat oven to 400°F.
- Cut bagels into bite-sized pieces and spread them evenly in the bottom of a greased 9x13 dish.
- In a medium saucepan on medium-low heat, combine cream cheese and cream and whisk until no lumps remain.
- Add shredded chicken to the cream cheese mixture and stir until coated. Remove from heat.
- In a small mixing bowl, combine diced tomatoes, red onions, pesto, black pepper, salt, and parmesan.
Assembly
- Spread the chicken and cream cheese mixture evenly over the bagels.
- Top with the bruschetta mixture.
- Sprinkle grated mozzarella over the top and place in the oven.
Baking
- Bake for 30 minutes.
- Allow to cool for a few minutes before cutting and serving.
Notes
Serve directly from the dish for the best texture. Pair with a simple arugula salad or roasted asparagus for a complete meal. Leftovers can be made into mini sandwiches.
