  • 3 tablespoons chia seeds
  • 1 cup unsweetened almond milk Can substitute with any plant-based or dairy milk.
  • 2 tablespoons cocoa powder
  • 1 tablespoon maple syrup Adjust sweetness to taste.
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, combine almond milk, cocoa powder, maple syrup, and vanilla extract. Stir until smooth.
  2. Add the chia seeds and mix thoroughly.
  3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2 to 3 hours or overnight until thick and creamy.
Serving
  1. Serve chilled in small bowls or mason jars, topped with chocolate chips, fresh berries, or nuts.

Notes

Store in an airtight container in the refrigerator for up to 4 days. Stir in a splash of almond milk if the pudding firms up more than desired.
