- Place chopped white chocolate and thickened cream in a heatproof bowl over a saucepan of simmering water, ensuring the bowl does not touch the water.
- Stir until the mixture is smooth and glossy. Add vanilla bean paste if desired.
- Set aside to cool slightly.
- Fold in chopped cranberries and pistachios.
- Refrigerate the mixture for about 3 hours until firm enough to roll.
- Once firm, scoop a tablespoon of the mixture and roll into a ball, then coat with desiccated coconut.
- Arrange the coated balls in a single layer in an airtight container and chill until ready to serve.
Notes
Store in an airtight container in the fridge for up to a week. These treats can be frozen in an airtight container with layers separated by parchment paper.
