Ingredients
  

For the patties
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons softened butter Make sure it is at room temperature
  • 1 teaspoon peppermint extract Adjust to taste if desired
  • 1/4 teaspoon salt
For the chocolate coating
  • 1 cup chocolate chips Dark or milk chocolate
  • 1 tablespoon coconut oil Optional, for melting chocolate

Method
 

Preparation
  1. In a bowl, mix together the powdered sugar, cocoa powder, softened butter, peppermint extract, and salt until a dough forms.
  2. Roll the dough into small patties and place them on a baking sheet lined with parchment paper.
  3. Chill the patties in the freezer for about 30 minutes.
Chocolate Coating
  1. In a microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
  2. Dip each frozen mint patty into the melted chocolate, letting excess chocolate drip off before placing back onto the parchment paper.
  3. Chill the coated patties in the refrigerator until the chocolate sets.

Notes

Serve alongside warm tea or coffee. Store in an airtight container in the fridge for about a week.
