Preparation
- In a bowl, mix together the powdered sugar, cocoa powder, softened butter, peppermint extract, and salt until a dough forms.
- Roll the dough into small patties and place them on a baking sheet lined with parchment paper.
- Chill the patties in the freezer for about 30 minutes.
Chocolate Coating
- In a microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
- Dip each frozen mint patty into the melted chocolate, letting excess chocolate drip off before placing back onto the parchment paper.
- Chill the coated patties in the refrigerator until the chocolate sets.
Notes
Serve alongside warm tea or coffee. Store in an airtight container in the fridge for about a week.
