Ingredients
  

Main Ingredients
  • 2 cups unsweetened shredded coconut
  • 3/4 cup fresh strawberries Thaw and drain if using frozen.
  • 3/4 cup freeze dried strawberries
  • 2 tablespoons coconut oil Use for coating.
  • 1/4 cup coconut cream Solid part from refrigerated coconut milk.
  • 2 tablespoons maple syrup
  • 1 pinch salt
  • 1 cup dark chocolate chips, melted

Method
 

Preparation
  1. In a food processor, blend the fresh strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and salt.
  2. Add the unsweetened shredded coconut and blend until combined.
  3. Press the mixture into a lined loaf pan and freeze for at least 1 hour.
  4. Once firm, carefully lift out of the pan and slice into 8 bars.
  5. Coat the bars in melted dark chocolate, sprinkle with freeze-dried strawberries, and chill until the chocolate is set.

Notes

Keep leftovers in the fridge for up to 7 days. For longer storage, freeze the bars between layers of parchment.
