Pudding Base
  • 1 cup white sugar Granulated sugar
  • 2 tablespoons cornstarch To thicken the pudding
  • 0.25 teaspoon salt Enhances flavor
  • 2 cups milk Can use dairy or non-dairy alternatives
  • 2 ounces unsweetened chocolate, chopped For a rich chocolate flavor
  • 2 large egg yolks To enrich the pudding
  • 2 tablespoons butter Adds creaminess
  • 2 teaspoons vanilla extract For flavor

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine the sugar, cornstarch, and salt.
  2. Slowly stir in the milk and chopped chocolate, and cook while stirring constantly.
  3. Once the chocolate melts and the pudding thickens, remove from heat.
  4. Whisk in the egg yolks until fully incorporated.
  5. Return to heat and cook for 2 more minutes.
  6. Remove from heat again and stir in the butter and vanilla extract.
  7. Let it cool before transferring to the fridge to chill.

Notes

To prevent lumps, mix cornstarch with a splash of milk before adding it to the saucepan. Adjust sugar to taste for a sweeter pudding. Can be served warm or chilled.
