Ingredients
  

For the crust
  • 1 and 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1 each egg yolk
  • 1 to 2 tablespoons cold water
  • a pinch salt
For the custard
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 1 tablespoon orange zest
  • 1/4 cup fresh orange juice
  • 1 teaspoon vanilla extract
For the ganache
  • 3/4 cup dark chocolate chips Use high-quality chocolate for best results.
  • 1/2 cup heavy cream
For garnish
  • as needed thin orange slices
  • as needed candied orange peel (optional)

Method
 

Preparation of crust
  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine the all-purpose flour, powdered sugar, and a pinch of salt.
  3. Cut in the cold, cubed butter until it takes on a crumbly texture.
  4. Mix in the egg yolk and just enough cold water to bring the dough together.
  5. Wrap the dough and chill in the fridge for about 20 minutes.
Baking the crust
  1. Roll out the dough and press it into tartlet pans, making sure to prick the bottoms with a fork.
  2. Bake for 12 to 15 minutes until golden brown, then let them cool.
Preparation of custard
  1. Heat up the milk until steaming in a saucepan.
  2. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch.
  3. Gradually pour in the warm milk while whisking.
  4. Return the mixture to the saucepan and cook over medium heat until thickened.
  5. Stir in the butter, orange zest, orange juice, and vanilla.
  6. Fill the tartlet shells with the custard and let chill for about 30 minutes.
Making the ganache
  1. Heat the heavy cream until bubbly.
  2. Pour it over the dark chocolate chips and stir until shiny and smooth.
  3. Drizzle the ganache over the chilled tartlets.
Serving
  1. Garnish with thin orange slices or candied orange peel before serving.

Notes

Use high-quality dark chocolate for the ganache for the best results. Don't rush the cooling process; patience is key for a perfect custard. Experiment with different citrus fruits for variations.
