Ingredients
  

Cookie Base
  • 1 ¼ cup blanched almond flour (or tigernut flour)
  • 3 Tbsp coconut sugar
  • 1 Tbsp ground flax
  • tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
Fudge Filling
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter (or Sunbutter)
Chocolate Coating
  • 1 cup dark chocolate (5oz)
  • ½ Tbsp coconut oil

Method
 

Preparation
  1. Preheat oven to 350 degrees F.
  2. Combine all dry cookie ingredients in a mixing bowl.
  3. Mix in wet ingredients, then knead the dough.
  4. Roll out the dough between parchment paper to about ⅛" thick.
  5. Cut into rectangles and bake for 8-10 minutes. Let cool.
Filling & Assembly
  1. Melt dark chocolate and mix in peanut butter.
  2. Cool fudge mixture and spread it on cookies.
  3. Assemble cookies in sets of three and freeze to set.
Coating
  1. Melt dark chocolate and coconut oil, then dip cookies in chocolate.
  2. Place on lined baking sheet to set and drizzle remaining chocolate over cookies.

Notes

Serve cookies slightly chilled or at room temperature. Arrange in a stack for a charming presentation. Perfect with milk or coffee.
