- In a large bowl, stir together the oats and salt. Set aside.
- In a small saucepan, over medium-high heat, whisk together the butter, sugar, milk, and cocoa. Bring the mixture to a boil for about a minute and then remove from heat.
- Whisk in the peanut butter and vanilla until well combined, creating a smooth and creamy mixture.
- Pour the chocolate peanut butter mixture over the oats and stir until the oats are well coated.
- Line a baking sheet with wax paper. Using a medium cookie scoop, drop the cookies onto the wax paper.
- Let the cookies cool on the countertop, and once they’re firm and dry, store them in the refrigerator.
Notes
These cookies can be served warm right after they cool, or chilled in the fridge for a firmer texture. They pair wonderfully with a glass of milk or tea.
