Ingredients
  

For the cookie base
  • 1 package chocolate sandwich cookies like Oreos
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Gently fold in to maintain texture
For the cheesecake layer
  • 400 grams cream cheese, softened Opt for full-fat for best results
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg

Method
 

Preparation
  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Line a baking pan with parchment paper.
  3. Lay the chocolate sandwich cookies in a single layer at the bottom of the pan.
  4. In a mixing bowl, cream together the softened butter, brown sugar, and white sugar until smooth.
  5. Introduce the egg and vanilla extract, blending well.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually incorporate the dry mixture into the wet ingredients and fold in the chocolate chips.
Cheesecake Layer
  1. In another bowl, whip together the softened cream cheese and sugar until silky.
  2. Stir in the vanilla and egg gently.
  3. Spoon dollops of the cookie dough over the chocolate cookie base, then layer the cheesecake mixture on top.
Baking
  1. Bake for 30-35 minutes until set and edges are golden.
  2. Allow to cool completely, then refrigerate for at least 2 hours before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. For variations, try adding crushed peppermint candy or caramel sauce.
