  • 3 pieces Ripe bananas, mashed Approx. 330g
  • 4 tbsp Unsalted butter, melted Approx. 56g
  • 1/4 cup Greek yogurt or sour cream Approx. 60g
  • 1 large egg Approx. 50g
  • 1 tsp Vanilla extract Approx. 5g
Dry Ingredients
  • 1/2 cup Brown sugar, packed Approx. 100g
  • 1/4 cup Granulated sugar Approx. 50g
  • 1 1/4 cups All-purpose flour Approx. 150g
  • 1/3 cup Cocoa powder Approx. 30g
  • 1 tsp Baking soda Approx. 5g
  • 1 tsp Cinnamon Approx. 2.5g
  • 1 dash Salt Approx. 0.5g
Folding Ingredients
  • 1/2 cup Chocolate chips Approx. 85g
  • 1/3 cup Chopped strawberries Approx. 50g

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease your loaf pan or line it with parchment paper.
  2. In a medium bowl, mash the ripe bananas until smooth. Stir in the melted butter and Greek yogurt.
  3. Whisk in the egg and vanilla extract, then stir in both the brown and granulated sugars until smooth.
  4. Gently fold in the flour, cocoa powder, baking soda, cinnamon, and salt, mixing just until combined.
  5. Stir in the chocolate chips and chopped strawberries until evenly distributed.
  6. Pour the batter into the prepared pan. Optionally, sprinkle a few extra chips and strawberry slices on top.
Baking
  1. Bake for 35–40 minutes or until a toothpick inserted comes out with moist crumbs.
  2. Let the loaf rest in the pan for 15 minutes before moving it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best sweetness and moisture. Toss the chopped strawberries and chocolate chips in a tablespoon of flour before folding them in to prevent sinking. Don’t overmix once you add the dry ingredients; a few streaks of flour are okay.
